<description><![CDATA[Okay people.  I need your help.  Early on in the life of this blog (circa last month) I told you a]]></description>
<content:encoded><![CDATA[<p>Okay people.  I need your help.  Early on in the life of this blog (circa last month) I told you about Rebecca Federman, the librarian at the New York Public Library who is in charge of the largest public menu collection in America.  In watching her video she says that she wouldn't ever refuse a menu.  Hmmmm...never refuse a menu you say?  This translates in my brain to "Send me some menus, STAT".  So here's the deal...</p>
<p>I'd like to assemble maybe 15 menus that say something about Charlotte NC and environs.  I'd like to keep it confined to restaurants that have been around for a while, institutions, if you will, that really speak to Charlotte history/culture.  Please give me some ideas.  I'm currently considerng the following:</p>
<ol>
<li>The Waffle House</li>
<li>Price's Chicken Coop</li>
<li>The Coffee Cup</li>
<li>Green's Lunch</li>
<li>Something to do with Johnson &#38; Wales</li>
<li>Something to do with the Panthers</li>
<li>Bank of America Corporate Dinning Room (if that even exists)</li>
<li>Ditto Wachovia (possibly more historically significant)</li>
<li>South 21 Drive-in</li>
<li>Gus Sir Beef</li>
<li>The Emerald</li>
<li>Bill Spoon's Barbeque</li>

<content:encoded><![CDATA[<p>Yes. It's raining. The daylight sky is pretty dark and the school luch menu actually says "chili" today. Woohoo! Planning, it's all in the planning. Fall weather always seems to need "soup" or chili of some kind.</p>
<p>Here's what we came up with for lunch today.</p>
<p>First I cooked the lentils.</p>
<p>1 1/2 c  dry lentils, cooked in 4 cups of water until soft.</p>
<p>Then I cooked 1 lb. of ground meat (turkey, pork, whatever)</p>
<p>and added in:</p>
<ul>
<li>one large white onion, diced</li>
<li>1 large can diced tomatoes</li>
<li>1 large can crushed tomatoes</li>
<li>1 can red kidney beans</li>
<li>1 can pinto beans</li>
<li>3 tablespoons of chili powder</li>
<li>2 tsp cumin</li>
<li>1 tsp sea salt</li>
<li>1 tsp white pepper</li>
</ul>
<p>Then I added about 1/2 of the cooked lentils and pureed the rest with 2 small jars of butternut squash baby food  with 1 can of garbanzo beans, and a small amount of water, probably a half of a cup. </p>
<p>The puree went in the pot with the rest of the tomatoes and beans. I did add some additional water of an unknown amount to make it the right consistancy. YMMV.</p>
<p>Let that simmer for 30 minutes. Yum.</p>

<content:encoded><![CDATA[<p>I shopped for only three meals this week. We'll be having one extra meal courtesy of mom, and one dinner out for our 4 year anniversary. The quick menu this week is/was:</p>
<ul>
<li>Goat cheese pasta with asparagus &#38; shallots and a stuffed pork chop</li>
<li>Skirt steak with crispy garlic potatoes and watercress salad</li>
<li>Zucchini and carrot ribbons with broad egg noodles and a small portion of sweet sausage</li>
</ul>
<p>I accompanied Ann, who has committed to working out again with much gusto, to the gym last Friday. We went again today, and I stayed quite a bit longer. I managed a fair amount of cardio and some resistance machines. Yay!</p>
<p>Walks have continued as well. My husband took me to three different cemeteries on Sunday for picture taking excursions.</p>

<p>Para ello tenemos que tener instalado el gconf-editor, si no lo tenemos en nuestro ordenador tecleamos en consola:</p>
<blockquote><p><strong>#sudo aptitude install gconf-editor</strong></p></blockquote>
<p>Luego pulsamos Alt+F2 y se nos abre el editor de configuración de Gnome. Navegamos por el arbol de directorios que tenemos a la izquierda y vamos abriendo carpetas: <strong><em>/ </em>&#62; <em>apps</em> &#62; <em>panel</em> &#62; <em>objects</em> &#62; <em>object_0</em></strong>. Normalmente será object_0 pero no tiene por qué. Para estar seguros pinchamos en él y buscamos a la derecha la clave <strong><em>“object_type</em></strong>“, debe tener el valor <strong>“<em>menu_object</em></strong>“.</p>
<p>Una vez localizado, habilitamos la penúltima, llamada <strong>“<em>use_custom_icon</em>”</strong> para decirle que vamos a usar un icono personalizado. Y en la parte superior, la cuarta opción, tenemos <strong>“<em>custom_icon</em>“</strong>, la seleccionamos y pinchamos con el botón izquierdo en su valor. Ahí escribiremos la ruta y el nombre de nuestra imagen. Y listo!!!</p>

<content:encoded><![CDATA[<p>Cuando instalamos <a title="Gnome" href="http://www.gnome.org" target="_blank">Gnome</a> por primera vez, este entorno trae por defecto un menú principal ( <em><strong>Aplicaciones, Lugares, Sistema</strong></em> ) que, gracias a las bondades de personificación del Software Libre, podemos cambiar y personalizar. Por defecto si hacemos clic derecho sobre la barra y vamos a <em><strong>Añadir al panel...</strong></em> podemos encontrar 2 menús principales.</p>
<ul>

<li>Menú principal</li>
</ul>
<p>El primero es el que trae por defecto Gnome, el segundo es el mismo menú pero al estilo de Windows, o sea, un solo menú. Pues bien, si no te gustan ninguno de los dos puedes probar <a title="Gimmie" href="http://www.beatniksoftware.com/gimmie/" target="_blank">Gimmie</a> un nuevo panel para GNOME que distribuye todos los elementos en cuatro categorías distintas.</p>
<p><strong>Linux:</strong> Es la zona donde encontraremos todo lo referente al sistema. Podemos encontrar los accesos a la impresora, la red y las preferencias del Sistema y demás.</p>
<p><strong>Programas</strong>:  Básicamente es el menú “<em>Aplicaciones</em>” del entorno de escritorio Gnome.</p>
<p><strong>Biblioteca</strong>: Todo lo referente a los archivos, sea cual sea su tipo. Fotos, audio, vídeo, documentos, downloads y demás…</p>
<p><strong>Gente</strong>: Desde aquí podremos acceder a los contactos de mensajería instantánea. También tendrá integración con GMail. Los contactos que se ven en la captura se han añadido automaticamente desde Pidgin.</p>
<p>Para instalarlo solo tenemos que teclear en consola:</p>

<description><![CDATA[So I&#8217;ve had aches before from knees to arms to thighs to stomach&#8230; but I have to say this]]></description>
<content:encoded><![CDATA[<p>So I've had aches before from knees to arms to thighs to stomach... but I have to say this is the first time I've spent part of a weekend hobbling around because it hurt to stand.</p>
<p>My husband and I decided to take a little walk Saturday afternoon in order to better enjoy the gorgeous weather. There is a Wildlife Refuge about a mile and a half from us, so we figured we'd walk there, take a walkabout and then head on home. What was proposed as a casual afternoon outing ending up being 4+ hours of hiking through the entire Wildlife Refuge - our rough estimate is that with the walk to / from the place we put in over 10 miles. This was after a week of returning to fitness for me, which meant my thighs were killing me Saturday night. Worse yet, I somehow put my weight on my foot weird after taking off my sneakers when we got home and immediately had pain throughout my right foot. Yikes! Feeling much better (although still achy) today, so hopefully the afternoon workout won't change that.</p>
<p>Meanwhile, I was a good kid Friday night and hammered out a menu and shopping list for the week.</p>

<content:encoded><![CDATA[<p>We have a lot of veggies in our refrigerator that are threating liquefication so many of this week's ingredients are on the pantry list rather than the grocery list. It's kind of a rough in-between time for menu planning. The fall vegetables aren't quite ready yet, but summery choices like vine-ripened tomatoes are fading fast. Several of these recipes are new choices though, and I'm pretty excited to try them.</p>

<p><strong>Beans &#38; Greens</strong>: this is a recipe from my new <a href="http://books.google.com/books?id=zkOTAAAACAAJ&#38;dq=How+to+Cook+Everything&#38;ei=RIPpSK_lEoKgswOMsrS5Bw&#38;client=firefox-a"><em>How to Cook Everything</em></a> cookbook, but it's pretty much exactly what it sounds like. We'll eat this over buttered toast.</p>
<p><strong><a href="http://www.epicurious.com/recipes/food/views/POTATO-AND-LEEK-SOUP-11599">Potato Leek Soup</a>:</strong> some local baby leeks inspired this menu choice. Like many of the reviewers, I'll doctor it up with some dairy and maybe some bacon, since there's some in the fridge. We'll have salad as well.</p>

<p><strong><a href="http://www.epicurious.com/recipes/food/views/LAMB-SAUSAGE-PATTIES-WITH-FRESH-MINT-FETA-AND-GARLIC-241337">Middle Eastern Meatballs</a>:</strong> though the recipe calls for lamb, we make it with our local grass-fed ground beef instead. It's cheaper and flavorful enough to be an adequate substitute. We'll eat these with couscous, roasted cauliflower, and yogurt.</p>

<p><strong>Weekly Notes:</strong></p>
<p>Since he was going to be in the Boston area on Monday, I had DH stock up on multiples of some of our favorite items (coffee beans, crackers, olive oil, juice, etc.) at Trader Joe's.  I didn't need to buy any meat this week (trying to use up freezer stuff as our pork order will be in next week!).  We bought milk, feta cheese, broccoli, red pepper, red onion, matzoh and pita bread.  I'm hoping to bake bread on Monday, too, as it's been awhile and the recent onset of fall weather has got me in the mood to do it again.</p>
<p>To keep our meat expenses down, we purchase our beef and pork from <a href="http://littleridgefarm.com/" target="_blank">a local CSA</a> once a year.  We have a dozen chickens that *should* start laying eggs sometime this month (October); in the meantime, we get our eggs from a local organic farmer who splits the income 60/40 with the church where I work.  We have a very large garden (with quite a bit of produce in the freezer) and are hoping to grow some things (lettuce, broccoli, spinach, etc.) year round in our greenhouse.</p>
<p>Our household consists of two adults and one young child.</p>

<content:encoded><![CDATA[<p>Como bien saben Nautilus es el Explorador de Archivos de GNOME<span style="font-family:arial;">, éste también es el responsable de los menús contextuales desde los cuales podemos acceder a determinadas funciones al hacer click derecho sobre algún elemento en una carpeta o en el escritorio.</span></p>
<p>De esta manera <span style="font-family:arial;">se pueden agregar pequeñas aplicaciones (Scripts) que te faciliten tareas y se pueden ejecutar desde el Explorador de Archivos (Nautilus) solo haciendo click derecho sobre el archivo que queremos que se ejecute, es decir, desde cualquier menú contextual y así ejecutar diversas funciones bastante útiles. Los Scripts (<span style="font-weight:bold;">todos en Español</span>) se dividen en las siguientes categorías:</span></p>
<p><span style="font-family:arial;">* <span style="font-weight:bold;color:#00ff00;">Audio:</span> Convierte archivos de audio de un formato a otro con facilidad.</span></p>
<p>* <span style="font-weight:bold;color:#00ff00;">Comandos de Ventana:</span> Ejecuta líneas de comandos fácilmente desde Nautilus.</p>
<p>*<span style="font-weight:bold;color:#00ff00;"> Comentarios:</span> Pon comentarios a tus fotografías para usarlos en otros scripts.</p>
<p>* <span style="font-weight:bold;color:#00ff00;">DVD: </span>Genera un DVD de fotografías con música y fondos.<br />

She warned me that the menu changes daily. This was exciting and nerve wrecking at the same time. Now though it’s a culinary adventure in which I look forward. The menu is a fusion of culinary cuisines from around the world. When I go I love to sit at the bar so that I can see the chefs in action; it also helps me with my decision making process as I am able to see the final preparation of the menu items listed. I have never had a bad meal here and I have taken several friends who agree. I usually frequent for lunch and it is always busy, bulging at the seams with patrons waiting. The restaurant recently underwent a renovation which added a patio with extra outdoor seating, perfect solution to a good problem. </span></p>
<p class="MsoNormal" style="text-align:justify;margin:0 0 10pt;"><span style="font-size:small;font-family:Calibri;">The prices have increased over time but this is still an affordable place to sample a great gourmet meal. At lunch $15 will cover your meal, this is a great time to go if you are visiting for the first time. I can assure you if you go once, you’ll go again. This is a Tallahassee gem, one which I am skeptical to share for fear that you may be in my seat the next time I go. Take a walk on the wild side and enjoy trying something new. </span></p>

<content:encoded><![CDATA[<p>While talking to some of our employees at Barney's the other day, we got on the subject of freezing foods.  In a slowing economy, people tend to stock up on sales more and more.  But, it doesn't do much good if stocking up also means throwing away food that goes bad.  So, here are a few ideas they shared with me. </p>
<p>Now, there's probably no surprise that fresh fruits and veggies are freezable.  But, here's a new one for me.  You can freeze milk!  <img src="http://66.235.120.64/ts?t=8085110157632264763&#38;pid=23296&#38;ppid=0" border="0" alt="" width="38" height="37" />This was great news for me since we buy a gallon and use about half of it before it goes bad!  We just aren't huge milk drinkers.  So, here are the specifics on freezing milk.  It will expand by about 9% when it freezes.  So, you have to remove about a cup and a half per gallon of milk before putting it in the freezer.  Otherwise, you'll have a huge, milky mess to clean up pretty quickly.  And there are a few other things you should know before you try this.  According to the National Dairy Council, freezing causes "undesirable changes in milk's texture and appearance." The dairy council wants every glass of milk you drink to be fresh, cold, and delicious. It wants you to love milk!  So, you might want to plan on using your frozen milk for cooking and baking.  Skim and low-fat freeze and thaw better than whole milk.  And, any type you freeze will have some degree of separation.  So, after you thaw it- in the refrigerator for at least a day- you'll have to shake it a lot or put it in the blender.  There are conflicting views on how long milk can stay in the freezer.   Some say 3 weeks while others say three months.  Either way, this could save you some money if you want to catch our milk sales and stock up!</p>
<p><img src="http://66.235.120.64/ts?t=10821298829153900143&#38;pid=23296&#38;ppid=1" border="0" alt="" width="39" height="34" />Eggs are also freezable.  One <a title="freezing eggs" href="http://frugalliving.about.com/od/foodsavings/tp/I_Can_Freeze_That.htm" target="_blank">website</a> recommended mixing the eggs and whites together and pouring them into ice cube trays.  This would make for easy storage.  Two cubes would equal about one large egg.  If you plan on making something with a whole egg, this would be perfect.  You can also separate yolks and whites and store them the same way- or in a freezer container.  For yolks, add 1/8 tsp salt or 1 1/2 tsp sugar or corn syrup per 1/4 cup of yokes.  Hard boiled egg yolks can be frozen, as well.  But, a whole egg doesn't freeze well.  The white becomes tough and watery.  Thaw the eggs in the refrigerator overnight or under running water.  They are best when used about 30 minutes after being in room temperature. </p>

<p>To make mornings easier, you might want to try making sandwiches for lunches all at once.  Here are a few suggestions for well freezing sandwich ingredients- peanut butter, cheese, lunch meat, fish, meat, and poultry.  Mayonnaise does not freeze well.  So, use salad dressing instead- or butter.  Using butter prevents the sandwich ingredients from soaking into the bread so a thin layer is recommended with all frozen sandwiches.  You can store the sandwiches up to three months.  If you put the frozen sandwich in the lunchbox in the morning, it will be thawed out and ready to eat by noon. </p>
<p>Some foods are freezable, but not always the same when thawed, such as sour cream.  During the freezing process, some foods seperate.  After thawing, even mixing it well can not always bring the original texture back.  This is perfectly fine for using it in recipes but, you may be disappointed if you try using it alone rather than mixing with other ingredients.</p>
